Green Bean Casserole

  This recipe is much better than the standard mushroom soup and French fried onion version. Green Bean Casserole Yield: 10 servings Ingredients: 2 tablespoons butter 2 tablespoons all-purpose flour 1 teaspoon salt 1 teaspoon white sugar 1/4 cup onion, diced 1 cup sour cream 3 (14.5 ounce) cans French style green beans, drained 2 cups shredded Cheddar cheese 1/2 cup crumbled buttery round crackers 1 tablespoon butter, melted Directions: Preheat oven to 350 degrees F (175 degrees C). Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat. Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese. Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

Charleston Breakfast Casserole

  An easy, crowd-pleasing breakfast or brunch idea. Try playing with the ingredients to dress it up or down, depending on your occasion. Charleston Breakfast Casserole Yield: 6 servings Ingredients: 9 slices bacon 3 tablespoons butter, melted 2-1/4 cups croutons 1-1/2 cups grated Cheddar cheese 4-1/2 eggs 1-1/4 cups and 1 tablespoon milk 3/4 bell pepper (any color), diced 2-1/4 teaspoons prepared mustard salt and pepper to taste Directions: Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Preheat oven to 325 degrees F (165 degrees C). Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese. Cream Puffs

 An easy and impressive way to make a great dessert. Whip them up and watch them disappear! Cream Puffs Yield: 10 cream puffs Ingredients: 1 (3.5 ounce) package instant vanilla pudding mix 1 cup heavy cream 1/2 cup milk 1/4 cup butter 1/2 cup water 1/8 teaspoon salt 1/2 cup all-purpose flour 2 eggs Directions: Mix together vanilla instant pudding mix, cream and milk. Cover and refrigerate to set. Preheat oven to 425 degrees F (220 degrees C). In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet. Bake for 20 to 25 minutes in the preheated oven, until golden brown. Centers should be dry. When the shells are cool, either split and fill them with the pudding mixture, or use a pastry bag to pipe the pudding into the shells.

Fluffy Pancakes

Tall and fluffy. These pancakes are just right. Topped with strawberries and whipped cream, they are impossible to resist. Fluffy Pancakes Yield: 6 pancakes Ingredients: 1 cup and 2 tablespoons milk 3 tablespoons white vinegar 1-1/2 cups all-purpose flour 3 tablespoons white sugar 1-1/2 teaspoons baking powder 3/4 teaspoon baking soda 3/4 teaspoon salt 1-1/2 egg 3 tablespoons butter, melted cooking spray Directions: Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour". Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Jalapenos are stuffed with cream cheese, wrapped with bacon, and barbecued on the grill. Grilled Bacon Jalapeno Wraps Yield: 6 servings Ingredients: 6 fresh jalapeno peppers, halved lengthwise and seeded 1 (8 ounce) package cream cheese 12 slices bacon Directions: Preheat an outdoor grill for high heat. Spread cream cheese to fill jalapeno halves. Wrap with bacon. Secure with a toothpick. Place on the grill, and cook until bacon is crispy.
